Pound chicken to ¼–½ inch thick for fast, even cooking and max crust contact.

Pulse almonds to coarse crumbs (not flour)—pulse 4–6 times in a processor for texture without oil release.

Pat chicken very dry before dredging; chill coated pieces 10 minutes to set crust.

Use room-temperature egg wash for better sticking; let excess drip fully before almond press.

Season crust with parmesan, lemon zest, garlic powder, paprika, salt, and pepper for depth.

Heat 2 tbsp high-smoke oil (avocado) in nonstick over medium.
