Instructions

Prep Chicken
  • Combine Almond, Parmesan, and Lemon Zest
  • Slice large breast horizontally into 2 thin cutlets (or pound flat).
  • Pat dry, season with salt and pepper.
  • Dip in egg,
  • press into almond-parmesan-lemon zest mix to coat evenly.
Cook Sauce First
  • Heat 1 tbsp oil in a pan over low-medium.
  • Add pricked tomatoes (and garlic if using);
  • cook 10-15 min, stirring until soft and juicy but intact.
  • Stir in cream, parmesan, basil; season lightly.
  • Keep warm. Fry Chicken
    • Heat 2 tbsp oil in a nonstick skillet over medium.
    • Fry coated chicken 4 min per side until golden and cooked (165°F internal).
    • Drain on paper towels.
    Serve
  • Plate chicken topped with warm sauce.
  • Pair with steamed greens or mashed potatoes for decadence.
