Chicken
- Pound the chicken to an even thickness (about ¾ inch). It cooks more evenly and stays juicier.
- Let it sit at room temperature for 15–20 minutes before cooking.
- Pat it completely dry before seasoning. Moisture prevents good browning.
Poblanos
- Char the skin until nearly black all over.
- Steam in a covered bowl for 5–10 minutes before peeling.
- Don’t rinse under water after peeling; you’ll wash away smoky flavor.
Fresno Peppers
- Add some early for flavor and reserve a few fresh slices for garnish.
- Taste the pepper before using all of it. Fresno heat varies considerably.
Building Flavor
- Get a deep golden-brown sear on the chicken. The browned bits (fond) left in the pan become the foundation of the sauce.
- When adding stock, scrape every bit of fond from the pan with a wooden spoon.
Sauce
- Keep the sauce at a gentle simmer, never a hard boil. Cream sauces can separate if overheated.
- Add cream cheese a little at a time and whisk until smooth.
- Reduce the sauce until it lightly coats the back of a spoon.
Finishing
- Remove the pan from the heat before adding the lemon juice.
- Stir in 1 teaspoon cold butter right before serving. This classic French technique, called monter au beurre, gives the sauce a glossy finish and richer mouthfeel.
- Taste and adjust salt at the very end. Sauces often need more salt than expected once reduced.
