Dry Beans

Cooking the beans over using canned increases Fiber and Protein. Sodium levels are lower, for you control the salt. Canned foods are usually high in sodium.

Cooking the Beans
1. Sort and rinse

  • Spread beans on a plate and pick out any small stones, shriveled pieces, or debris.
  • Rinse well under cool water in a colander.
2. Soak
  • Put all beans in a large bowl and cover with 3–4 times their volume of cool water.
  • Soak 8–12 hours (or overnight). Drain and rinse.
3. Cook on the stovetop
  • Put soaked beans in a large pot and cover with fresh water to about 2 inches above the beans (or 2:1 water‑to‑beans by volume).
  • Bring to a boil, then reduce to a gentle simmer.
  • Cook 45–75 minutes, stirring occasionally, until beans are tender but not mushy.
  • Add a pinch of salt only after they’re almost tender (late in cooking) to avoid tough skins.

Putting it Together

  • Dice the Cucumber, Red Onion, Red Bell Pepper
  • Slice the Cherry Tomatoes and Kalamata Olives in half
  • Rinse and drain the beans well.
  • Add beans, cucumber, tomatoes, onion, bell pepper, olives, feta, and herbs to a large bowl.
  • Whisk the dressing ingredients in a small bowl.
  • Pour dressing over the salad and toss gently.
  • Chill for at least 20 to 30 minutes before serving.

Placed this under United States Cuisine because it is totally made up recipe with a little Mediterranean flavoring. Next time may go a little heavier on the lemon juice, but will definitely double the recipe.

Soaking reduces cooking time and helps minimize gas‑causing carbohydrates (oligosaccharides). When cooking, keep the water at a gentle simmer, not a hard-boil, and add salt only in the last 10–15 minutes to keep the skins tender and avoid toughness. Taste beans as they cook; small red and pinto are usually ready in about 45–60 minutes, while great northern may take closer to 60–75 minutes depending on age and storage.

1/4 Cup Parsley could also be added, you will notice green leafy ingredients are not used by me. Have allergy issues in our home.

 

Notes

Second time making this went heavier on the Kalamata Olives and Lemon. Also doubled the recipe because the wife and I made short work of the finished product. Experimenting with different types of beans as well.
