Instructions

  1. Pat the pork chops dry and season both sides with salt and pepper.
  2. Heat the olive oil in a skillet over medium-high heat, then sear the pork chops until browned, about 3 to 4 minutes per side depending on thickness. Remove to a plate.
  3. Lower the heat to medium and add the butter and onion. Cook 2 to 3 minutes, then add the apple and thyme. Cook until the apple starts to soften.
  4. Stir in the mustard, vinegar, and water or broth, scraping up the browned bits. If you want a sweeter finish, add the honey.
  5. Return the pork chops to the skillet and cook until they reach 145°F inside, then rest them a few minutes before serving.

“Pork chops and applesauce!” is a saying my wife likes to blurt out at the mention of pork chops for dinner.

When a lonely apple was spotted which our grandchildren missed, it would surely go to waste without finding a use. Applesauce was not going to be made with one apple, so this recipe was tossed together as a replacement for applesauce.

Dijon Mustard: If you do not have Dijon available, regular mustard can be mixed with white wine or white vinegar instead (1:1 ratio). It would be milder and more acidic, but works. We regularly do not keep Dijon around, which is the reason for the mention.
