- The Fix: As tempting as it is, never slice ciabatta straight out of the oven. The interior starches need at least 1 hour on a cooling rack to finish setting and release trapped moisture. If it still turns out gummy, extend your bake time by 3 to 5 minutes to ensure the interior cooks completely.
- The Cause: Dead yeast, cold baking surface, or over-proofing.
- The Fix: Always verify your water temperature is lukewarm (98°F–105°F) so you don’t kill the yeast.
