Placed this under United States Cuisine because it is totally made up recipe with a little Mediterranean flavoring. Next time may go a little heavier on the lemon juice, but will definitely double the recipe.
Cooking with fresh (dried) beans instead of canned makes your Mediterranean three‑bean salad healthier, more flavorful, and surprisingly easy once you get into a routine. Start by sorting and rinsing your small red, great northern, and pinto beans, then soaking them either overnight (8–12 hours) or via the quick‑soak method (boil 2–3 minutes, then steep 1 hour). Soaking reduces cooking time and helps minimize gas‑causing carbohydrates (oligosaccharides). When cooking, keep the water at a gentle simmer, not a hard-boil, and add salt only in the last 10–15 minutes to keep the skins tender and avoid toughness. Taste beans as they cook; small red and pinto are usually ready in about 45–60 minutes, while great northern may take closer to 60–75 minutes depending on age and storage.
A big advantage of dried beans is better texture and flavor control: the skins stay intact, the interiors are creamy and uniform, and you can season the cooking water lightly with aromatics like garlic, bay leaf, or onion without the metallic or overly salty taste that sometimes comes from canned‑liquid resins. For this salad, lightly salt the cooking water, then finish seasoning with the lemon‑olive‑oil dressing, so the beans absorb the Mediterranean flavors more cleanly.
Nutritionally, fresh beans win over canned because you skip the sodium and preservatives. By rinsing and cooking your own, you cut sodium dramatically while getting a bit more fiber and protein per serving. Dried beans also store for months in a cool, dry place, so you can cook a big batch and freeze extras for future salads, soups, or grain bowls. When you pair your freshly cooked beans with fresh cucumbers, tomatoes, peppers, and herbs, the salad tastes brighter, more vibrant, and less “processed” than versions relying on canned product. 1/4 Cup Parsley could also be added, you will notice green leafy ingredients are not used by me. Have allergy issues in our home.

Second time making this went heavier on the Kalamata Olives and Lemon. Also doubled the recipe because the wife and I made short work of the finished product. Experimenting with different types of beans as well.
